Gumbo- Gumbo is a hearty stew popular in the state of Louisiana and is the official state cuisine. It consist primarily of a strongly flavored stock, meat or shellfish, a thickener and the Creole "holy trinity"- celery, bell peppers and onions. Chef's Gumbo is a file-based gumbo made with homemade sausage, chicken and shrimp.
Caesar Salad- A green salad made of romaine lettuce and croutons with a simple dressing mix of lemon juice, olive oil, egg, Worcestershire, anchovies, garlic, dijon, parm and black pepper.
Stuffed Flounder- Flounder is a mild-tasting fish with a slightly sweet undertone, similar to halibut, tilapia or branzino. This filet has a traditional New Orleans stuffing with both crab and shrimp and served in a white wine sauce.
Cinnamon Roll King Cake- The New Orleans Mardi Gras King Cake- A blend of coffee cake and cinnamon roll and is frequently packed with fruit fillings and cream cheese.
